From the team that brought us White Mojo in Melbourne CBD’s Hardware Street, comes their sister cafe in the outer eastern suburb of Balwyn. Owners Ben and Gia have again used their creative powers to craft an alluring space, which is adorned with marble tiles, and light timber features. Staff are attentive, and neatly dressed with tailored leather aprons. The magic doesn’t stop there. The charm seems to have filtered through the kitchen, where creatively designed meals are dished up and served in such a theatrical manner, their memory will linger long after that final mouthful.
Each meal is an expression of the chefs obvious inventiveness, with artful arrangements that are both aesthetically pleasing, and satisfy the taste buds. Options range from Compressed Watermelon with whipped Goats curd and gin sorbet, the Pulled Pork Burger made with coffee and maple infused pork, served in a squid ink Brioche bun, and the Cauliflower Pannacotta, theatrically presented under a glass cloche filled with smoke.
Coffee is from Zest, and their blend is a unique presentation of Sumatran coffee, combining two different processing methods, wet hulled, and natural. In true White Mojo fashion, black coffee is extracted at around 85 degrees, to gently brings out its natural flavours. My short black had a rich texture with sweet tropical fruit tones.
A visual and culinary delight. The Cauliflower Pannacotta with Chorizo dust, Canadian Scallops, Crispy Pancetta, 63° egg, and potato popcorn. I was left feeling spellbound.
