Axil Chadstone

Axil coffee has launched its latest store at the new Chadstone. It’s been a long time coming. I’ve been a regular at this shopping centre for 3 decades now, and as a teenager, it was my stomping ground on school holidays. Chadstone, or as us locals call it, “Chaddy”, has a special place in my heart. Not because I’m a fashionista, but when it first opened in 1960, my grandad worked here. Half a century later, Chadstone has grown into a fashion capital, with over 500 stores, 10000 car parks, and 20 million customers a year. However, it wasn’t until last week that we finally had specialty coffee. Dave and Zoe Makin have done it again. Following the inception of Axil Hawthorn in 2011, the empire has spread into Richmond (Mayday), Flinders Lane, and South Cross Lane (SXL). With the launch of Chadstone’s $660 million redevelopment this month, Axil unveiled its new store designed by St Style. One can immediately see the synergy between this venue and the other Axil stores. St Style have maximised the corner store, and separate the dining area from the takeaway section with metal lattice screens that serve as shelving for retail beans and coffee brewing gear.  The space is fresh, with lots of greenery that echoes the meaning behind the coffee roasters name; hexagon wall features that carry on into the shopfronts brass framework; blue pastel tones; and soft timber tones.

Being a coffee enthusiast, the focal point for me was the custom Linea PB, with the old adage “Many hands make light work” printed on the black mirror glass panel. This gorgeous piece of machinery is housed within a stainless steel body finished in matte black, handcrafted solid oak sides with laser engraved logos, and a brass cup rail that matches the brass features above the coffee counter.  In the hopper today was the Colombian Caldono, which is a washed processed red Caturra varietal that delivered a sweet cup, with stone fruit notes.

The menu here is a carbon copy of the much loved Axil Hawthorn café. They have all the staple options like eggs your way with sourdough toast; bircher muesli; and smashed avo.  The All-day menu offers both indulgent and hearty options, such as Red Velvet pancakes with black sesame ice-cream; Ferrero Rocher chocolate waffles with hazelnut parfait; Baked eggs with spicy peperonata; Rosemary and lemon crumbed chicken burger with sweet potato wedges; Philly steak sandwich with 12 hour smoked beef brisket; Lamb Ragu with potato gnocchi; and Goats’ cheese and marjoram tortellini.

Axil is located on the ground level (just across from Sportsgirl), and Opens 9am – 5:30pm Monday to Wednesday, 9am – 9pm Thursdays to Saturdays, and 10am – 7pm Sundays.
