I know it’s not a coffee destination per se, but I got a tip off that Black Star Pastry was a must when in Sydney. Not just because they have gluten free cakes (I’m coeliac), but because their signature watermelon and strawberry cake was to die for. It’s made up of two layers of almond dacquoise, rose-scented cream, watermelon, and strawberries. The top layer of pistachios and dried rose petals made it picture perfect, and I almost felt guilty digging in, and it felt like a violation against a work of art.
Black Star Pastry prides itself on traditional methods, and beautifully presented real food that’s prepared and served with love. It’s a patisserie that takes an artistic approach, and does not compromise of freshness and flavour.
They somehow manage to perfect the ultimate fusion of flavours, from the Tuscan chocolate and hazelnut cake with layers of Amedei Toscano chocolate mousse, hazelnut dacquoise, and gianduja ganache; the Pistachio and lemon zen cake with white chocolate mousse, and lemon curd layers; the Black sesame and yuzu slice; right through to the spiced pumpkin and walnut cake that’s vegan friendly!
They even have specialty coffee, which is sourced from The Little Marionette. I washed my decadent cake down with a smooth long black, that had sweet toffee highlights. A marriage made in patisserie heaven .
