I paid a visit to Sensory Labs roastery, and had the pleasure of having a quick chat with one of Australia’s most remarkable woman in coffee, Lucy Ward. It’s always an honor to hear Lucy speak of her traversers around the globe in pursuit of that perfect cup. She has fast made her mark on Sensory Lab since moving from Proud Mary, not to mention her impact on the broader Australian Specialty Coffee Association. What I admire most, is her depth of knowledge not only of the beans and how best to roast them, but each specific region coffee is grown, and the variance in taste profile from each area.
