One of the joys of being a Melbourne cafe hunter, is watching members of the coffee community evolve and flourish. I’ve met some incredible people along the way, and Jason Kim is one such human. I first met Jason at Black Flat several years ago, when he was pumping out Axil coffee in a shoebox sized cafe that was the first to bring specialty coffee to Glen Waverley. He has since spread his wings, and joined the Workshop Bros to bring us BE.AN. What’s most heartwarming about this new venture, is that Jason is now roasting for this hole-in-the-wall city cafe, and has realised the extent of his true potential. Hats off to you, young man. So very proud to share a coffee with you.
In my cup? A blend roasted by Jason at Bureaux Collective, which is made up of the Brazilian Serra Negra, and Ethiopian Celinga natural. This blend aims to be a real crowd pleaser- easy to drink, and not too intense. It has a creamy mouthfeel thanks to the Brazilian component, while the Ethiopian Celinga sees it coating the palate.
